Chef Kaoru Chang, Executive Chef of La Mar Bellevue in Seattle and a third-generation Nikkei chef, presents a refined take on Nikkei cuisine. With over 19 years of experience, including work at Nobu and Juvia Miami Beach, he showcases a delicate balance of Japanese technique combined with Peruvian soul.
